Aloo Bhuna Masala
A rich and flavourful Satvik curry made with roasted potatoes and capsicum, finished in a creamy spiced gravy.
Ingredients
For the Curd Masala Mixture
- ½ cup thick curd, whisked
- 1½ tbsp Saankrit Aloo Bhuna Masala
- 1 tsp kasuri methi
- ½ cup water
For the Gravy
- 2 tbsp ghee
- 1 cup prepared base gravy
- ½ tsp red chilli powder
- ¼ tsp turmeric powder
- 1 tsp dhania powder
- Salt to taste
For the Roasted Vegetables
- 2 medium potatoes, boiled and cut into cubes
- 1 medium capsicum, cut into cubes
- 1 tbsp butter
- 2 tbsp fresh coriander, chopped
Method

Prepare the curd mixture:
In a bowl, whisk the curd until smooth. Add Saankrit Aloo Bhuna Masala, kasuri methi and water. Mix well and keep aside. -
Prepare the gravy:
Heat ghee in a heavy-bottomed pan. Add the prepared base gravy, red chilli powder, turmeric powder and dhania powder. Mix well and bring it to a gentle boil. -
Add the curd mixture:
Reduce the heat to low. Gradually add the prepared curd mixture while stirring continuously. Keep stirring to prevent the curd from splitting. -
Roast the vegetables:
Meanwhile, heat butter on a tawa. Add the boiled potato cubes and capsicum. Roast until they develop a light golden colour and the capsicum is slightly charred. -
Combine:
Add the roasted potatoes and capsicum to the gravy. Mix gently and add fresh coriander. -
Simmer:
Let the curry simmer on low heat until the gravy thickens and coats the potatoes beautifully. -
Serve:
Garnish with fresh coriander and serve hot with roti, naan, rice or as part of a festive thali.
